Ingredients

  • 8 oz orzo pasta, cooked and cooled

  • 1 cup nasturtium microgreens

  • 1 cup cherry tomatoes, halved

  • 1/4 cup Kalamata olives, halved

  • 1/2 cup feta, crumbled

  • 2 tbsp olive oil

  • 1 tbsp red wine vinegar

  • 1 tsp dried oregano

  • Salt & pepper

Instructions

    Whisk olive oil, vinegar, and oregano; season with salt and pepper.

    Combine orzo, cherry tomatoes, olives, and feta in a large bowl.

    Toss with dressing.

    Fold in nasturtium microgreens just before serving to preserve their color and peppery bite.
