1 zucchini, diced
1 cup frozen peas
1 shallot, sliced
2 cups vegetable broth
1 cup broccoli microgreens
1 tbsp olive oil
1 lemon, juiced
Salt & pepper
Sauté shallot in olive oil 2 minutes. Add zucchini and cook 3 minutes.
Add broth and peas; simmer 8 minutes.
Blend until silky smooth. Season with lemon juice, salt, and pepper.
