Ingredients

  • 1 zucchini, diced

  • 1 cup frozen peas

  • 1 shallot, sliced

  • 2 cups vegetable broth

  • 1 cup broccoli microgreens

  • 1 tbsp olive oil

  • 1 lemon, juiced

  • Salt & pepper

Instructions

    Sauté shallot in olive oil 2 minutes. Add zucchini and cook 3 minutes.

    Add broth and peas; simmer 8 minutes.

    Blend until silky smooth. Season with lemon juice, salt, and pepper.

    Ladle into bowls and top with a generous handful of raw broccoli microgreens.
