"Live" microgreen trays are growing and thriving when they arrive. There are a few simple steps you can take to extend their shelf life.
Keep the growing media moist but not saturated. To water, remove or tilt the greens tray and pour 1-2 cups of water into the lower tray. Gently replace greens and repeat every 1-2 days until trays are empty.

Keep microgreens in an area with moving air. A table near a ceiling fan or in a high-traffic area works well. Avoid enclosed spaces where air can become stagnant.
Microgreens will grow without supplemental light, but they benefit from some light. A sunny window sill or a table under a light fixture provides adequate light for healthy growth.
Live trays can be held in a walk-in for up to a week. Store them on the top rack for food safety regulations. They will not continue to grow but will stay alive and be ready to cut.
Use clean scissors to cut greens close to the soil line. This method works well for harvesting portions as needed.
For harvesting an entire tray, use a sharp knife. Cut greens well above the cut line for best results.
Rinse greens before eating to remove seed hulls or growing media. If storing cut greens in the fridge, ensure leaves are dry before packaging.
Chickens and other birds LOVE to pick through the soil for seeds and stems. They are an excellent source of minerals and vitamins for animals.
If you have a worm bin at home you can just dump the growing media and roots directly into it. Worms adore decomposing roots.
