1 cup farro, cooked
1 cup kohlrabi microgreens
2 small beets, roasted and sliced
3 tbsp hummus
2 tbsp tahini
1 lemon, juiced
1 tbsp olive oil
Salt, pepper & za'atar
Divide warm farro between two bowls.
Arrange roasted beets and a dollop of hummus alongside.
Whisk tahini with lemon juice and a splash of water until pourable.
Pile kohlrabi microgreens on top, drizzle with tahini and olive oil, and dust with za'atar.
