8 oz pasta (spaghetti or linguine)
2 cups basil microgreens, packed
1/4 cup pine nuts, toasted
1/4 cup Parmesan, grated
1 clove garlic
3 tbsp olive oil
1 lemon, juiced
Salt & pepper
Cook pasta per package directions; reserve 1/4 cup pasta water.
Blend microgreens, pine nuts, Parmesan, garlic, olive oil, and lemon juice until smooth. Season with salt and pepper.
Drain pasta and toss with pesto, adding pasta water as needed to loosen.
Serve topped with extra Parmesan and toasted pine nuts.
