Where the record begins
ChefPax traceability is forward-looking from the current operational baseline. Opening inventory can be entered from physical counts, but activity that predates the baseline is not reconstructed or presented as complete. Records are only as complete as the events entered into the operating system.
Operational, culinary, and commercial truth
A tray record describes what physically exists. Culinary records describe what ChefPax knows and supports with evidence. Publication and inventory describe what customers can currently buy. Keeping those truths separate prevents a product page from promising stock that operations have not recorded.
