Ingredients

  • 1/2 lb Chinese noodles, rice noodles, or soba

  • 1 oz Texsel greens microgreens per serving (generous handful)

  • Protein of choice: shredded chicken, soft-boiled egg, tofu cubes, or shrimp (optional)

  • 2 cloves garlic, minced

  • 1 teaspoon fresh ginger, minced

  • Soy sauce, to taste

  • Rice wine vinegar, to taste

  • Peanut or neutral oil, to taste

  • Sriracha or chili sesame oil, to taste

  • Bone broth or vegetable broth (for soup version, optional)

Instructions

    Combine garlic, ginger, soy sauce, rice vinegar, oil, and chili sauce in a small bowl; taste and adjust.

    Boil noodles per package directions; drain.

    Toss noodles with sauce and optional protein.

  • 4

    Divide into bowls. Pile Texsel greens microgreens on top — do not cook them; add at the last moment so the hot noodles wilt them just slightly.

    For soup version: ladle hot broth over the noodle bowl before adding microgreens. Serve immediately.
