1/2 lb Chinese noodles, rice noodles, or soba
1 oz Texsel greens microgreens per serving (generous handful)
Protein of choice: shredded chicken, soft-boiled egg, tofu cubes, or shrimp (optional)
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
Soy sauce, to taste
Rice wine vinegar, to taste
Peanut or neutral oil, to taste
Sriracha or chili sesame oil, to taste
Bone broth or vegetable broth (for soup version, optional)
Combine garlic, ginger, soy sauce, rice vinegar, oil, and chili sauce in a small bowl; taste and adjust.
Boil noodles per package directions; drain.
Toss noodles with sauce and optional protein.
Divide into bowls. Pile Texsel greens microgreens on top — do not cook them; add at the last moment so the hot noodles wilt them just slightly.
For soup version: ladle hot broth over the noodle bowl before adding microgreens. Serve immediately.
