2 slices whole-grain bread
1 ripe avocado
1 cup sorrel microgreens
1 tablespoon lemon juice
Salt and pepper to taste
Red pepper flakes (optional, for garnish)
Toast the whole-grain bread slices until golden brown.
In a bowl, mash the avocado with lemon juice, and season with salt and pepper.
Spread the mashed avocado generously over the toasted bread.
Top each slice with a handful of sorrel microgreens.
Sprinkle red pepper flakes on top if desired, then serve immediately.
