4 large eggs
1 cup sorrel microgreens, roughly chopped
1/4 cup bell pepper, diced
1/4 cup onion, diced
1/4 cup shredded cheese (cheddar or your choice)
2 tablespoons butter
Salt and pepper to taste
In a bowl, whisk together the eggs, salt, and pepper until well combined.
Heat a non-stick skillet over medium heat and melt the butter.
Add the diced bell pepper and onion to the skillet, sautéing until softened.
Pour the egg mixture into the skillet, allowing it to cook for about 2 minutes before adding the chopped sorrel microgreens and cheese on top.
Once the edges are set, gently fold the omelette in half and cook for another minute until the cheese melts.
Microgreens are young edible plants harvested shortly after germination. Published research reports that nutrient and phytochemical concentrations vary substantially by species, seed source, growing conditions, harvest stage, and storage, so crop-specific health claims should be interpreted cautiously.
• Microgreens have been studied as sources of vitamins, carotenoids, minerals, and other bioactive plant compounds.
moderate evidence• Nutrient composition cannot be assumed to be identical across microgreen varieties or production systems.
strong evidence• ChefPax presents this crop primarily for culinary flavor, texture, freshness, and menu variety rather than as a treatment or medical product.
