1 cup Shungiku microgreens
200g firm tofu, cubed
1 bell pepper, sliced
1 carrot, julienned
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon ginger, minced
2 green onions, chopped
Heat sesame oil in a pan over medium heat and add cubed tofu, cooking until golden brown on all sides.
Add the sliced bell pepper and julienned carrot to the pan, stirring for 5 minutes.
Stir in the minced ginger, soy sauce, and Shungiku microgreens, cooking until the greens are wilted.
