2 slices whole grain bread
1 ripe avocado
1 cup pea microgreens
1 tablespoon lemon juice
Salt and pepper to taste
1 tablespoon extra virgin olive oil
Optional: red pepper flakes or chili powder for spice
Toast the whole grain bread slices until golden brown and crispy.
In a small bowl, mash the ripe avocado with lemon juice, salt, and pepper until creamy.
Spread the avocado mixture evenly onto each slice of toasted bread.
Top generously with fresh pea microgreens and drizzle with olive oil.
Sprinkle with red pepper flakes if desired for an extra kick.
