1 block firm tofu, drained and cubed
1 tablespoon soy sauce
1 tablespoon sesame oil
2 cups mixed bell peppers, sliced
1 cup kohlrabi microgreens
2 cloves garlic, minced
1 teaspoon ginger, grated
2 green onions, sliced for garnish
Heat sesame oil in a large skillet over medium heat, then add cubed tofu and soy sauce. Cook until golden, about 5 minutes.
Add garlic and ginger, stirring for about 1 minute until fragrant.
Incorporate sliced bell peppers and cook for another 5 minutes until tender.
Fold in kohlrabi microgreens and cook for an additional 2 minutes until wilted.
Serve hot, garnished with sliced green onions.
