1 cup cooked quinoa
1 cup kohlrabi microgreens
1/2 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 cup feta cheese, crumbled
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste
In a large bowl, combine the cooked quinoa, kohlrabi microgreens, cherry tomatoes, cucumber, and feta cheese.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
Drizzle the dressing over the salad and toss gently to combine.
Serve immediately or chill for 10 minutes to let the flavors meld.
