2 boneless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 cup cantaloupe microgreens
½ cup diced cucumber
¼ cup chopped fresh cilantro
Juice of 1 lime
Salt and pepper to taste
Preheat the grill to medium-high heat and brush the chicken breasts with olive oil. Season with garlic powder, paprika, salt, and pepper.
Grill the chicken for about 6-7 minutes on each side, or until fully cooked through.
While the chicken is grilling, prepare the salsa by combining cantaloupe microgreens, diced cucumber, cilantro, lime juice, salt, and pepper in a bowl.
Once the chicken is cooked, let it rest for a few minutes, then slice it and place on a plate.
Top the grilled chicken with the cantaloupe microgreen salsa and serve with your favorite sides.
Microgreens are young edible plants harvested shortly after germination. Published research reports that nutrient and phytochemical concentrations vary substantially by species, seed source, growing conditions, harvest stage, and storage, so crop-specific health claims should be interpreted cautiously.
• Microgreens have been studied as sources of vitamins, carotenoids, minerals, and other bioactive plant compounds.
moderate evidence• Nutrient composition cannot be assumed to be identical across microgreen varieties or production systems.
strong evidence• ChefPax presents this crop primarily for culinary flavor, texture, freshness, and menu variety rather than as a treatment or medical product.
