1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
2 kohlrabi, peeled and chopped
4 cups vegetable broth
1 cup kohlrabi microgreens
1/2 cup coconut milk
Salt and pepper to taste
In a large pot, heat olive oil over medium heat, add diced onion and garlic, cooking until translucent.
Stir in the chopped kohlrabi and sauté for about 5 minutes.
