2 ripe mangos, diced
1 cup cilantro microgreens, roughly chopped
1/2 red onion, finely diced
1 jalapeño, seeded and minced
2 limes, juiced
1 tbsp olive oil
Salt to taste
Tortilla chips for serving
Combine mango, red onion, and jalapeño in a bowl.
Add lime juice, olive oil, and a pinch of salt; toss well.
Fold in cilantro microgreens just before serving.
Serve with tortilla chips or over grilled fish or chicken.
