4 small flour tortillas
1 cup shredded cheese (cheddar or Monterey Jack)
1 cup popcorn microgreens
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon cumin
Sour cream or salsa for serving (optional)
Heat a skillet over medium heat and add olive oil.
Sprinkle garlic powder and cumin onto one side of each tortilla, then place two tortillas in the skillet, seasoned side down.
Top with half of the cheese and half of the popcorn microgreens, then cover with the remaining tortillas, seasoned side up.
Cook until the bottom is golden, then carefully flip to cook the other side until cheese is melted and the tortillas are crisp.
Cut into wedges and serve warm with sour cream or salsa on the side.
Microgreens are young edible plants harvested shortly after germination. Published research reports that nutrient and phytochemical concentrations vary substantially by species, seed source, growing conditions, harvest stage, and storage, so crop-specific health claims should be interpreted cautiously.
• Microgreens have been studied as sources of vitamins, carotenoids, minerals, and other bioactive plant compounds.
moderate evidence• Nutrient composition cannot be assumed to be identical across microgreen varieties or production systems.
strong evidence• ChefPax presents this crop primarily for culinary flavor, texture, freshness, and menu variety rather than as a treatment or medical product.
