1 ripe avocado, diced
1 cup popcorn microgreens
1 small cucumber, diced
1/4 red onion, thinly sliced
2 tablespoons olive oil
1 tablespoon apple cider vinegar
Salt and pepper to taste
1 tablespoon sesame seeds (optional)
In a large bowl, combine the diced avocado, cucumber, and red onion. Toss gently to mix without mashing the avocado.
Drizzle the olive oil and apple cider vinegar over the salad, adding salt and pepper to taste. Gently mix to coat all ingredients.
Add the popcorn microgreens and toss once more to combine, being careful not to bruise the greens.
Sprinkle sesame seeds over the top for added texture and flavor, if desired.
Serve immediately for the freshest taste, or chill for 10 minutes for a refreshing side dish.
Microgreens are young edible plants harvested shortly after germination. Published research reports that nutrient and phytochemical concentrations vary substantially by species, seed source, growing conditions, harvest stage, and storage, so crop-specific health claims should be interpreted cautiously.
• Microgreens have been studied as sources of vitamins, carotenoids, minerals, and other bioactive plant compounds.
moderate evidence• Nutrient composition cannot be assumed to be identical across microgreen varieties or production systems.
strong evidence• ChefPax presents this crop primarily for culinary flavor, texture, freshness, and menu variety rather than as a treatment or medical product.
