1 large whole grain tortilla
1/2 cup mixed microgreens
1/2 cup hummus (store-bought or homemade)
1/2 avocado, sliced
1/4 cup grated carrots
1/4 cup cucumber, thinly sliced
Salt and pepper to taste
Spread a generous layer of hummus over the whole grain tortilla, covering it evenly.
Layer the mixed microgreens, avocado slices, grated carrots, and cucumber on top of the hummus.
