1 pound shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon cumin
Salt and pepper, to taste
6 small corn tortillas
1 cup fennel microgreens
1/2 cup pico de gallo
In a bowl, toss the shrimp with olive oil, paprika, cumin, salt, and pepper.
Heat a skillet over medium-high heat, then add the shrimp and cook for 2-3 minutes on each side until cooked through.
