150g pasta of choice (spaghetti or penne)
1 cup sorrel microgreens
1/4 cup pine nuts, toasted
1/2 cup grated Parmesan cheese
1/4 cup olive oil
1 garlic clove
Salt and pepper to taste
Cook the pasta according to package instructions; reserve 1/4 cup of the pasta water and drain the rest.
In a food processor, combine sorrel microgreens, toasted pine nuts, garlic, and Parmesan; pulse until finely chopped.
Slowly drizzle in olive oil while the processor is running until the mixture is smooth. Add reserved pasta water as needed for consistency.
Toss the cooked pasta with the sorrel pesto and season with salt and pepper to taste.
Serve warm, garnished with additional Parmesan if desired.
