200g pasta (spaghetti or linguine)
1 cup sorrel microgreens, chopped
1 cup heavy cream
1 clove garlic, minced
2 tbsp olive oil
Salt and pepper to taste
Parmesan cheese, for serving
Cook the pasta according to package instructions until al dente, then drain and set aside.
In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
Add the heavy cream to the skillet and bring to a gentle simmer, then stir in the chopped sorrel microgreens, cooking for another 2-3 minutes until wilted.
Toss the cooked pasta in the cream sauce, season with salt and pepper, and stir well to coat.
Serve hot, garnished with freshly grated Parmesan cheese.
