2 cups mixed salad greens
1 cup mustard microgreens
1 large carrot, peeled and sliced
1 avocado, diced
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and pepper, to taste
Preheat your oven to 400°F (200°C). Toss the sliced carrots with 1 tablespoon of olive oil, salt, and pepper, then spread them on a baking sheet and roast for 15 minutes until tender.
