2 cups mustard microgreens
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1 avocado, diced
2 tablespoons olive oil
1 tablespoon apple cider vinegar
Salt and pepper to taste
In a large mixing bowl, combine the mustard microgreens, cherry tomatoes, cucumber, red onion, and avocado.
In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper to create the dressing.
