2 cups Swiss chard microgreens
1 cup cherry tomatoes, halved
1/2 cucumber, sliced
1/4 red onion, thinly sliced
1/4 cup feta cheese, crumbled
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon orange juice
Salt and pepper to taste
In a large bowl, combine Swiss chard microgreens, cherry tomatoes, cucumber, red onion, and feta cheese.
In a small bowl, whisk together olive oil, lemon juice, orange juice, salt, and pepper to create the vinaigrette.
Drizzle the vinaigrette over the salad and toss gently to combine.
Serve immediately, or chill for 10 minutes to enhance flavors.
