4 cups mixed greens (spinach, arugula, etc.)
1 cup sunflower microgreens
1/2 cup cherry tomatoes, halved
1/4 cucumber, sliced
1/4 red onion, thinly sliced
2 tablespoons olive oil
1 tablespoon orange juice
Salt and pepper to taste
In a large bowl, combine the mixed greens, sunflower microgreens, cherry tomatoes, cucumber, and red onion.
In a small bowl, whisk together the olive oil, orange juice, salt, and pepper to create the vinaigrette.
