1 block firm tofu, drained and cubed
2 tablespoons soy sauce
1 tablespoon sesame oil
1 cup bell peppers, sliced
1 cup broccoli florets
1 cup amaranth microgreens
2 cloves garlic, minced
Cooked rice for serving
In a skillet, heat sesame oil over medium heat and sauté the garlic until fragrant.
Add the cubed tofu and cook until golden brown on all sides, about 7-10 minutes.
Stir in the bell peppers and broccoli, then add soy sauce, cooking until the vegetables are tender.
Remove from heat and gently fold in the amaranth microgreens.
Serve hot over cooked rice for a complete meal.
