2 cups shungiku microgreens
1 cup cherry tomatoes, halved
1/2 cucumber, sliced
1/4 red onion, thinly sliced
1/4 cup feta cheese, crumbled
3 tablespoons olive oil
2 tablespoons fresh lemon juice
Salt and pepper to taste
In a large bowl, combine the shungiku microgreens, cherry tomatoes, cucumber, red onion, and feta cheese.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until emulsified.
