4 whole grain or spinach tortillas
1 cup hummus (store-bought or homemade)
1 cup sunflower microgreens
1/2 bell pepper, thinly sliced
1/2 cup shredded carrots
1/4 teaspoon paprika
Salt and pepper to taste
Spread a generous layer of hummus over each tortilla, leaving a small border around the edge.
Layer the sunflower microgreens, bell pepper slices, and shredded carrots evenly over the hummus.
Sprinkle paprika, salt, and pepper to taste on top of the veggies.
Roll the tortillas tightly to form wraps, then slice them in half.
Serve immediately or pack for a healthy on-the-go lunch.
