200g whole wheat pasta
1 cup basil microgreens
1/2 cup parsley microgreens
1/4 cup pine nuts, toasted
1/2 cup grated Parmesan cheese
1/2 cup olive oil
2 cloves garlic
Salt and pepper to taste
Cook the whole wheat pasta according to package instructions, then drain and set aside.
In a food processor, combine basil microgreens, parsley microgreens, toasted pine nuts, Parmesan cheese, garlic, and a pinch of salt.
While the processor is running, slowly drizzle in the olive oil until the mixture is smooth and creamy.
Toss the cooked pasta with the herb microgreens pesto until well coated, adding a splash of pasta water if needed.
Serve immediately, garnished with additional microgreens and a sprinkle of pepper.
