What to Expect at Our Booth

When you find the ChefPax booth at SFC, you'll see live growing trays arranged on the table — sunflower, pea shoots, radish, and whatever's in peak season that week. The trays are still actively growing when they arrive at the market, which is the whole point: you're getting a living product, not a bag of greens that was harvested days ago somewhere far away.

Every tray has a sticker on the side with the chalked sow date — that's how you know exactly how old it is. You take the tray home and snip from it daily as needed. No packaging, no containers. Just a living tray, your scissors, and whatever you're cooking.

The booth is run by Geoff, who grows everything in Manor, TX. Ask him anything — variety recommendations, how to harvest a live tray, which greens pair with your menu style, or whether he can grow something specific for a future Saturday. That direct grower conversation is something you don't get at a grocery store.

Grocery Store Microgreens

Pre-cut and packaged, usually 5–10 days into their shelf life by the time you buy them. They're harvested at a central facility and shipped. By purchase day, much of the life has already elapsed.

What's on the Table vs What Requires Preorder

Our core varieties — sunflower, pea shoots, radish, broccoli, and ChefPax Mix — are available same-day at the market every Saturday. These are our standard weekly grows, and we bring them to market as live, rooted trays — no cutting, no packaging, ready to go home with you.

Specialty varieties like shiso, wasabi mustard, nasturtium, amaranth, and lemon basil are grow-to-order. They require 7–14 days of dedicated grow time and a preorder reservation so we know to set a tray aside. If you want something specific at a future Saturday, contact us at least two weeks ahead.

Sunflower is the most approachable first tray. Mild, nutty, substantial crunch, and it works across nearly every dish — salads, tacos, bowls, sandwiches, and eggs. ChefPax Mix is also a great all-in-one option if you want variety right away.
