2 cups mustard microgreens
1 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 red onion, thinly sliced
1/4 cup olive oil
2 tablespoons fresh lemon juice
1 tablespoon honey or agave syrup
Salt and pepper to taste
In a large bowl, combine the mustard microgreens, cherry tomatoes, cucumber, and red onion.
