2 cups mixed greens
1 cup arugula microgreens
1/2 cup radish microgreens
1/2 cucumber, diced
1/2 bell pepper, diced
1/4 cup cherry tomatoes, halved
2 tbsp olive oil
1 tbsp balsamic vinegar
Salt and pepper to taste
In a large salad bowl, combine the mixed greens, arugula microgreens, radish microgreens, cucumber, bell pepper, and cherry tomatoes.
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper for the dressing.
