1 block (14 oz) firm tofu, drained and cubed
2 tablespoons soy sauce
1 tablespoon sesame oil
2 cups kohlrabi microgreens
1 bell pepper, sliced
1 carrot, julienned
2 green onions, sliced
Cooked rice or noodles for serving
Heat sesame oil in a large skillet over medium-high heat and add the cubed tofu, cooking until golden brown on all sides.
Add the bell pepper and carrot to the skillet and stir-fry for another 3-4 minutes until vegetables are tender.
Pour in the soy sauce and toss everything to coat thoroughly in the sauce.
Add the kohlrabi microgreens and green onions, cooking for an additional 2 minutes until greens are just wilted.
Serve hot over your choice of cooked rice or noodles for a delicious meal.
