2 cups arugula microgreens
1 ripe avocado, diced
1/4 red onion, thinly sliced
1/2 cup cherry tomatoes, halved
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Crumbled feta cheese for topping (optional)
In a large bowl, combine arugula microgreens, diced avocado, red onion, and cherry tomatoes.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
Drizzle the dressing over the salad and gently toss to combine.
Top with crumbled feta cheese if desired and serve immediately.
