3 large eggs
2 tablespoons milk
Salt and pepper to taste
1/2 cup broccoli microgreens
1/4 cup shredded cheese (optional)
1 tablespoon olive oil
1/4 cup diced onion
1/4 cup diced bell pepper
In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
Heat olive oil in a skillet over medium heat, then sauté onions and bell peppers until soft.
Pour the egg mixture over the sautéed vegetables, allowing it to cook for a few minutes until the edges start to set.
Sprinkle broccoli microgreens and cheese (if using) over one half of the omelette.
Fold the omelette in half and continue cooking until fully set, then serve warm.
