2 cups radish microgreens
1 cup mixed greens (arugula, spinach, etc.)
1/2 cup cherry tomatoes, halved
1/4 cup cucumber, sliced
1/4 red onion, thinly sliced
2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 tablespoon orange juice
Salt and pepper to taste
In a large bowl, combine radish microgreens, mixed greens, cherry tomatoes, cucumber, and red onion.
In a small bowl, whisk together olive oil, apple cider vinegar, orange juice, salt, and pepper to create the vinaigrette.
Drizzle the vinaigrette over the salad and gently toss to coat the greens evenly.
Serve the salad immediately as a refreshing side or light meal option.
