1 can (15 oz) chickpeas, drained and rinsed
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
4 small tortillas
1 cup kohlrabi microgreens
1/2 avocado, sliced
Salsa for topping
In a skillet, heat olive oil over medium heat and add the chickpeas, smoked paprika, and cayenne pepper, cooking for 5-7 minutes until heated through.
Warm the tortillas in another skillet or in the microwave until pliable.
Assemble each taco by placing a generous amount of chickpeas, kohlrabi microgreens, and avocado slices on each tortilla.
Top with your favorite salsa and enjoy these flavorful tacos.
