8 small corn tortillas
1 cup kohlrabi microgreens
1 ripe avocado
1/4 cup Greek yogurt or plant-based yogurt
1 tablespoon lime juice
1/2 teaspoon cumin
Salt to taste
Sliced radishes for garnish
In a blender, combine the avocado, yogurt, lime juice, cumin, and salt; blend until smooth and creamy.
Warm the corn tortillas in a skillet over low heat for about 1-2 minutes on each side.
Spread a layer of avocado cream on each tortilla, then top generously with kohlrabi microgreens.
Garnish with sliced radishes and serve immediately.
