1 cup cooked quinoa
1 cup kohlrabi microgreens
1/2 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 red onion, finely chopped
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste
In a large bowl, combine the cooked quinoa, kohlrabi microgreens, cherry tomatoes, cucumber, and red onion.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create a dressing.
Pour the dressing over the salad and toss gently to combine all ingredients.
Let the salad sit for about 5 minutes to allow flavors to meld before serving.
