1 cup cooked quinoa
1 can black beans, rinsed and drained
1 cup cherry tomatoes, halved
1 cup cilantro microgreens
1/2 red onion, finely diced
1 tablespoon olive oil
Juice of 1 lime
Salt and pepper to taste
In a large bowl, combine the cooked quinoa, black beans, cherry tomatoes, red onion, and cilantro microgreens.
In a small bowl, whisk together the olive oil, lime juice, salt, and pepper to create the dressing.
Pour the dressing over the quinoa mixture and toss gently to combine.
Let the salad sit for about 10 minutes for flavors to meld.
